Things I’ve done in the last few weeks! Apple Pie as a special request from my step son for his birthday. Haven’t made an apple pie in 10 years but he was over the moon!
Made brownies with Mexican Hot Chocolate and cinnamon for my friends as a Friday treat.
Finally broke out my Rotisserie for Sunday supper. Made roasted butternut squash and potatoes to join the party.
For “Sister Weekend” I made use of a few items I found in my freezer. A pie shell and peppered bacon made the cut. I had a ton of fresh basil and summer squash from a friends garden, add some cheese and WHAM! you have a quiche fit for a king…or a sister.
We had our annual Arts and Wine festival this weekend and I found a Coconut and Lime balsamic vinegar that pulled a gun on me. It MADE me buy it. I swear. So I thought, since I have this balsamic I may as well put it to good use. So I brushed it on this pretty little salmon filet and paired it with an angel hair pasta loaded with tomato, fresh mozzarella and SO MUCH basil. A little olive oil and we had magic.
Summer begs for barely cooked veggies and food on the go. While I’m looking forward to the Fall I will miss all the fresh tomatoes!
