My girlfriend gave us a bunch of beautiful organic basil this weekend. I didn’t want it to go bad so I decided it was pesto party time! Here is a quickie for your weeknight.
The lineup: basil, pine nuts, garlic, parmesan, olive oil, salt and pepper.
Cook time: 10 min
2 1/2 cups of fresh basil
1/4 cup pine nuts (toasted)
3 cloves of fresh garlic
2/3 cup olive oil
1/2 cup plus 1 Tablespoon grated parmesan cheese
Salt and pepper to taste
In a food processor combine basil, garlic and pine nuts. Slowly add oil as the processor is going. Remove and stir in cheese. Season to taste.
